Chicken Chili

Saturdays are the BEST!!!! Today I laid around and did NADA!!!! I didn't get out of the house until 7:00pm! It was great! Ryan and I ate banana bread, fruit and coffee for brunch and laid around watching shows from our DVR that we had previously recorded. I watched What Not To Wear, The Soup, Real World Marathon, and MadTv. Fun Stuff. And when we finally got up off our lazy butts, we went out for some chinese, did some grocery shopping and then came home and I made my famous white chicken chili. Well it's only famous to me and Ryan, so I guess it's not really famous...but maybe after this blog it will be! :)

Here's the recipe if you'd like to try it! You'll love it - I promise!!!!

Chicken Chili
(Serves 12 cups)

Prep time: 10 min.
Cook time: 3 hours (but it's simmering mostly)

Ingredients:
1 (16 oz) package dried navy beans
4 (14.5 oz) cans chicken broth
1 small onion, chopped
2 cloves garlic, minced (I usually double that though...I heart garlic)
1 tsp ground black pepper
1 tbsp dried oregano
1 tbsp ground cumin
0.5 tsp ground cloves
5 cups chopped, cooked chicken meat (I boil 4-5 boneless chicken breasts with olive oil, salt and oregano and then shred it)
2 (4 oz) cans diced green chile peppers
1 cup water
1 tsp salt
1 jalapeno pepper, seeded and minced

Directions:
1. Sort and wash beans. Place beans, broth, onion, garlic, black pepper, oregano, cumin, and ground cloves in a Dutch oven. Bring to a boil. Cover, reduce heat, and simmer for 2 hours.

2. Stir in chicken, chilies, water, salt, and jalapeno. Bring to a boil. Cover, reduce heat, and simmer for 1 hour; stirring often.

...and that's it!!!! Pop in your favorite movie or watch your favorite show while waiting for the chili to simmer! I promise it's worth the 3 hours!!!!!! AND you'll have the leftovers for a few more days...if it lasts and I say that because it's so good it may go quicker than expected! Ryan begs me to make it every fall!!!!!

Your White Chicken chili is famous to Cherie and I!!!! You made it for us one night when you and Ryan had us over for dinner! We have the recipe... and Cherie has made it a few times...

So, it actually "world famous white chicken chili"!!!!!!!!!!!!!
